Mocha Mint Smoothie

Holiday Greetings! Can you believe Christmas is in only 3 days? To me, it feels like December just started and then all of a sudden Christmas is only a few days away and everyone is scrambling to get ready. I guess the holidays have a way of creeping up on you.

This season I have been super into anything chocolate and mint flavored. Peppermint mocha coffees (or, if you’re around the south shore of MA, Girl Scout Cookie coffee from Marylou’s which is DELICIOUS and tastes exactly like a thin mint), minty hot chocolate, chocolate bars with peppermint, peppermint bark, you name it!

I recently learned about Chobani’s #MadeWithChobani project and felt inspired to see what I could come up with. I thought, what better way to feature Chobani in a recipe than to incorporate it into my favorite flavor combination and thus the idea for this Mocha Mint Smoothie was born.

My Mocha Mint Smoothie includes vanilla Chobani Greek yogurt, chilled coffee, cocoa powder, peppermint extract, frozen bananas, and milk. It’s creamy, filling, and packed with flavor. And bonus – it’s healthy! I slurped mine down after the gym today and it was the perfect post-workout snack. I used vanilla yogurt to keep things simple but for a real treat you could use Chobani’s Indulgent Mint and Dark Chocolate flavor!

Mocha Mint Smoothie
makes 1 smoothie

Ingredients:

  • 1 frozen banana, cut into chunks
  • 1/4 cup Chobani Greek yogurt (vanilla, plain, or mint and dark chocolate)
  • 1/4 cup chilled coffee
  • 2 Tbsp cocoa powder or chocolate syrup
  • 1/2 cup milk
  • Few drops of peppermint extract (about 1/8 tsp)
  • Sweetener of choice (stevia, coffee creamer, etc.)*
  • Optional: ice cubes for a thicker smoothie, protein powder for extra protein

*Sweetener of some sort is recommended to balance out the strong flavors of the coffee and unsweetened cocoa powder.

Directions:

Combine all ingredients in a blender and blend until smooth. Sweeten to your liking and enjoy!

Banana Peanut Butter Milkshake

Today I’m going to keep it short and sweet, because it’s Friday and because I’m lazy.

Did you know today is National Peanut Butter Lover’s Day? To celebrate, I’m sharing a drink recipe I’ve been really enjoying for the past few weeks. I tend to go through phases where I eat a lot of peanut butter, and then I eat none at all for like three months. Right now I’m in a peanut butter phase and have gone through almost an entire jar of peanut butter in just a few weeks, which is normally unheard of for me. It’s probably because I recently bought my favorite type of peanut butter after not having any for almost a year.

Peanut Butter & Co. makes my favorite peanut butter in the whole world – The Bee’s Knees.I can only find it at one store back home, but last time I was visiting they were out of it. I picked up some Mighty Maple instead, which is almost just as good. Peanut Butter & Co. has 10 different varieties of peanut butter and they are made with all-natural ingredients.

This milkshake combines peanut butter, frozen bananas, milk, and protein powder to make a healthy drink that’s perfect for before or after the gym. It’s thick, creamy, and tastes kind of like a banana split in drink-form. I’ve been having one after the gym and some days it’s honestly enough to motivate me to get off my butt and go exercise – knowing I can treat myself with a delicious (and healthy) milkshake afterwards.

Frozen bananas, when blended up, turn into an ice cream-like consistency without the help from cream or added sugar. If you left the milk out of this recipe, you’d have something similar to ice cream and I’m betting it would taste pretty darn good, too. This recipe can easily be made vegan if you use dairy-free milk, such as soy or almond. I used coconut milk because it’s my personal favorite. This shake is also delicious with coffee if you need an extra pick-me-up – just add 1/2 cup brewed coffee that’s been chilled. Yum!

Banana Peanut Butter Milkshake
makes 1 milkshake

Ingredients:

  • 1 banana, cut into chunks and frozen (make sure you peel it and cut it into chunks before you freeze it or else you’ll be sorry!)
  • 1/2 – 3/4 cup milk (any type will work – cow’s milk, soy, almond, coconut, etc.)
  • 1/2 scoop vanilla protein powder or 1/3 cup vanilla Greek yogurt
  • 2 Tbsp peanut butter
  • optional add-ins: 1/2 tsp cinnamon or cocoa powder

Directions:

Add all ingredients to a blender or food processor and blend until smooth. Sweeten to taste and serve immediately, or place in freezer for later use.

Chocolate Cherry Smoothie & What I’ve Been Up To Lately

It is my goal, as I’ve mentioned before, to update this blog with a recipe at least once a week. The past month to month and a half have been especially busy for me, and I’ve found myself falling short of that goal multiple times. Not only did I have my wisdom teeth out last month, but I also moved into a new apartment right outside of Boston with two of my close friends from school! Senior year of college, we all dreamed of having a cute little apartment in the outskirts of Boston, but I didn’t believe it would really happen so soon.

The first few weeks of apartment hunting were full of ups and downs; in early September, we found an apartment we fell in love with, went through all the paperwork and were told all was going smoothly and we would be signing the lease within a few days, just to then be told that the owner chose other tenants (which we later found out was not true – ouch!) I was a little bit heart broken and still daydream about that apartment, but I suppose it was just too good to be true. In mid-September, we found another place that met all of our needs and decided to go for it, keeping our fingers crossed. This time we got lucky, and we now call that apartment home!

So the past couple of weeks, I’ve been sorting through all of my belongings and packing up my life. Last weekend, with the help of my family, I moved into our new apartment and have been living there for the past few days. Unfortunately, I realized I left my camera  at my mom’s and wasn’t able to upload any photos to this blog. I’m back at my mom’s to collect the last of my things, including the camera, so hopefully I can get back on track with weekly blog updating!

Anyway, before I moved, I photographed a delicious smoothie that I made. After I found frozen cherries at my grocery store the week before, I knew I had to somehow incorporate them into a recipe. This smoothie is packed with fruit, protein, a hint of chocolate, and lots of flavor. Feel free to add spinach or kale to get even more nutrients!

Chocolate Cherry Smoothie
makes 1 serving

Ingredients:

  • 1 cup frozen cherries
  • 1/4 cup sliced frozen bananas
  • 1/8 cup chocolate protein powder (or other flavor – optional)
  • 1 1/2 Tbsp cocoa powder
  • 1/2 cup vanilla Greek yogurt

Directions:

Combine all ingredients in a blender and blend until smooth. Taste and add any additional ingredients as you find necessary. (I added about 1 tsp sugar to make it a little bit sweeter. A splash of milk may also be needed if it’s too thick.) Serve immediately, or freeze for later use.

Since I didn’t bring my camera to my new apartment, I’ve been using my iPhone to take photos of what I’ve been eating lately.

And I also wanted to share something cool I learned via Pinterest: If you buy green onions (scallions, or spring onions) and they come with the roots attached, you can easily grow your own at home! After you’ve used up the green parts, simply trim them down to where the white part ends and stick them in a small cup with an inch or two or water. Put them in a sunny location and the green parts will shoot up in a matter of days and be ready to eat!

When I came home last night, after leaving them for 5 more days (for a total of 9 days), this is what they looked like:

I’ve heard this also works for herbs such as cilantro and parsley. I found this exciting because those are things I buy every week at the store, and now I can easily grow them at home! Hopefully next summer I’ll have learned more about gardening and can plant a proper herb/vegetable garden.

Anybody else know of cool secrets/shortcuts like this that you’d like to share?

Vanilla Coffee Protein Shake

First of all, I want to apologize for my absence lately. I had my wisdom teeth out on the 7th and so I’ve been kind of under the weather these past few days. I aim to post a new recipe on here at least once or twice a week, but I’ve unfortunately been falling short lately. I realize that probably bothers nobody except me, however, so onto the food!

I can’t  eat solid foods yet because my gums are still quite swollen and sore, so I’ve been trying to make the most of this and exploring new smoothies and protein shakes. My mother drinks a protein shake every morning for breakfast, consisting of “Tropical Dreamsicle” flavored protein powder and Vanilla Silk, and it’s pretty tasty. She also has chocolate and vanilla protein powder that she’s been letting me use, so this morning I decided to whip up a shake.

In addition to desperately missing eating solid food and actually chewing (instead of just sloshing stuff around in my mouth), I’ve also missed my iced coffee. I’m allowed to drink coffee, but somehow drinking it out of a cup instead of through a straw isn’t quite as satisfying. (In case you’ve never had your wisdom teeth out, you’re not supposed to use a straw after having them removed because you may disrupt the blood clot that’s formed over the wound and could lead to a painful infection called a dry socket – ouch). I did have some leftover iced coffee in the fridge this morning, so I decided to combine it with protein powder to make a coffee protein shake, yum!

If you’re unfamiliar with protein powder, fear not; I knew little about it until a few months ago. Powdered whey protein is a simple way to add protein to your diet and is used by many athletes to build lean muscle and lose fat. Protein is, of course, essential to the human diet and helps to keep you feeling full for longer. I used to think that only athletes or body builders used whey protein, but I’ve come to realize that’s not true and that anybody can use it! It comes in an endless variety of flavors and can be added to smoothies, shakes, oatmeal, etc. To learn more about it, click here.

This shake tastes like a thick iced coffee, but is loaded up with protein, so you’re getting your caffeine boost and protein all in one. My version uses vanilla-flavored protein powder and has a fairly strong coffee flavor, but feel free to use whichever flavor powder you like; chocolate, almond, raspberry, banana – anything will do! One scoop of protein powder (using the scoop the packaging provides you with, which is  a little less than a 1/2 cup) has 25g of protein. Substitute Greek yogurt for regular yogurt and your shake has over 30g of protein! It’s perfect for a morning when you don’t have time to cook a real breakfast, or just want a quick pick-me-up before the gym.

Vanilla Coffee Protein Shake

Ingredients:
makes 2 servings

  • 2 cups ice
  • 1 cup chilled strong-brewed coffee (using the cold-brew method, or simply prepare a strong cup of coffee ahead of time and refrigerate)
  • 1/2 cup vanilla protein powder
  • 1/2 cup milk
  • 1/4 cup vanilla yogurt (use Greek yogurt for extra protein!)

Directions:

Simply combine all ingredients in a blender and pulse for 30-40 seconds or until all ingredients are blended. If a thicker consistency is desired, add more ice. Serve immediately. This recipe makes 2 servings, so if you only need one serving, freeze the rest for later use.
