Light Buffalo Chicken Salad

Buffalo Chicken Salad

I really love good buffalo chicken, whether it be wings, in a sandwich, on pizza – you name it. Especially with some creamy bleu cheese dressing, mhmmm. I also love chicken salad. Unfortunately, bleu cheese dressing and mayonnaise aren’t exactly the best for your waist.  I got this particular idea from my roommate Jennie, who made a healthier version of buffalo chicken dip using Greek yogurt in place of cream cheese/dressing. Hot cayenne pepper sauce is low cal and fat free, so it’s a guilt-free way to spice up your meal (watch out for traditional buffalo wing sauce, though – it’s often mixed with butter and has a lot more sodium).

In addition to using Greek yogurt instead of mayo, I decided to throw in a Laughing Cow Cheese Wedge. You’ve probably seen the commercial for these – they’re a soft, spreadable cheese with only 35 calories per wedge and come in all sorts of flavors. They sell a Light Bleu Cheese flavor, but that wasn’t available at my grocery store, so I bought Light Queso Fresco and Chipotle instead. It added a nice creamy, cheesy flavor to the chicken salad.

I know a lot of people are turned off by the word “light” or “low calorie”, but I personally think this recipe is still full of flavor considering it’s under 300 calories.

Ingredients:
makes 1-2 servings

  • 1 skinless, boneless chicken breast, cooked and shredded (you can grill the chicken or even boil it for about 10-15 minutes)
  • 2 Tbsp plain Greek yogurt
  • 1 Laughing Cow Cheese Wedge in Light Bleu Cheese or Light Queso Fresco and Chipotle (or other flavor of your choice)
  • 1-2 tsp Frank’s Red Hot original cayenne pepper sauce, depending on how much heat you like
  • pinch of salt and pepper, and chili powder/red pepper flakes for extra spice

shred up that chicken reaaal good.

Directions:

Simply place the shredded chicken and all other ingredients into a small mixing bowl and stir until combined. Add any extra spices if desired. Serve in a bowl or on a sandwich.

Me being me, I of course added slices of avocado to my buffalo chicken sandwich. Sliced tomato or baby spinach would also be a nice addition. Or you could throw it on top of some greens and have a buffalo chicken salad… salad. Buffalo chicken salad and greens? Shredded buffalo chicken and cheese salad? ..
